Sweet Chili Lime Mussels Au Gratin

Great entertaining dish. I usually like mussels in their own water but this is a welcome exception.


For 5 lbs mussels (about 4 people depending on how much they eat ?). I serve it as an appetizer alongside other seafood apps:

  • 5 lbs mussels, larger mussels require more filling (about 45-60 mussels depending on size)
  • 1/2 cup white wine
  • 1/4 cup olive oil
  • 2 tbsp butter melted
  • 2 cloves garlic, finely chopped
  • 1/2 onion finely chopped
  • 3 tbsp parsley finely chopped
  • Salt, pepper
  • 1/2 cup seasoned bread crumbs, plus more for sprinkling
  • Juice from 1/2 lime
  • 1/4 cup sweet chili sauce
  • 3/4 cups shredded mozzarella cheese

Directions

  1. Mix all the ingredients together in a bowl except for mussels. Should have a bit of a runny consistency.
  2. Scrub the mussels. Place them in a heavy skillet or pot. Cover and steam over a medium flame until the mussels open.
  3. When cool enough to handle, remove one half shell from each mussel. Place the other half  on a baking sheet.
  4. Place a spoonful of mixture on mussels and sprinkle with crumbs.
  5.  Bake at 425°F just long enough to heat through.
  6. Serve on hot plates.
