Cheesy Roasted Cauliflower

14539a38-6603-42ef-aa63-879ccb83ecb7-1I often struggle to make delicious sides that the kids will eat too.  Often the vegetables I like get the cut eye and no thank you.  The ones they like are always the same. Broccoli, beans and salad are often on repeat, with persistent begging for each bite.  This recipe was one that made both the adults and children happy.  It was easy, took very little time to prepare and was obviously delicious.

The kids enjoyed pulling it apart and choosing the cheesier pieces.

For 1 head of cauliflower, you will need:

  • 3 tbs olive oil
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 1 tsp chopped fresh parsley (or dried)
  • 1/2 cup shredded cheddar or mozzarella cheese (I used both)

Procedure:

  1. Trim the bottom (stem) of the cauliflower so that it is able to stand up flat.  Remove leaves from the sides. Score cauliflower by making slits in it diagonally and then diagonally the opposite way to make diamonds.
  2. Mix oil with seasoning (no cheese) and brush entirely over the cauliflower, trying to get into the creases that were cut out.
  3. Cover cauliflower with aluminum foil and place on a pyrex dish and bake in the oven at 375 for 40 min. Alternatively, you can omit the foil and place in the microwave on high for 10 min.  Cook for another 7-10 min on high.
  4. Sprinkle cheese in the creases and all over the cauliflower.  Try to get as much into the creases as possible.  Bake an extra 7-10 min in the oven until the cheese melts and remove when the cheese begins to get crispy.
  5. Let sit covered for 5-10 min before serving.
