Healthy-er Chocolate Zucchini Banana Muffins 

Can I even say that? Well there’s no dairy, no oil or butter and less sugar due to the sweetness of the bananas… So I guess they’re not too bad. Plus it took more time to find my muffin tin than it did to whip these up. Too easy. 

Recipe for 12 muffins (even though I later wished I would have doubled it):

  • 1 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 or less cocoa powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup coconut milk (you can use regular milk or Greek yogurt)
  • 1/3 cup mashed banana (or applesauce)
  • 1/2 cup coconut or organic sugar (or less if you don’t want them too sweet)
  • 1 cup grated zucchini
  1. Preheat oven to 350•c. Line muffin tin with paper liners.
  2. Combine first five ingredients and mix. Set aside. 
  3. Beat eggs, sugar, milk. Add banana and zucchini.
  4. Add remaining ingredients mix until just combined. 
  5. Divide evenly into 12 muffin liners. Bake for 17-19 min until top hardens or toothpick comes out clean.
