Fluffy pancake recipe

Every Sunday morning my boys ask me to make them the same thing….pancakes. I’ve spent weeks looking for the perfect recipe but it has to be followed exactly to obtain the best results.

The trick to this recipe is in the ‘soured’ milk. It makes a nice fluffy batter.

Also, make sure you measure baking soda, baking powder and salt exactly.

Finally, be very careful not to burn them. I put my stove on medium or a bit lower. You have to watch as they cook quickly. The outside browns very quickly too.

Ingredients for 2-3 people (10 medium sized cakes):

  • 3/4 cup milk
  • 2 tablespoons white vinegar
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Directions:

  1. Combine vinegar and milk. Let sit 5 min.
  2. Mix flour, sugar, baking powder, baking soda and salt in a bowl.
  3. Add egg and butter to the milk and whisk.
  4. Pour the mixture into the flour mixture and combine.
  5. Spray griddle or nonstick pan with cooking spray. Put on medium heat.
  6. Spoon onto griddle and cook for a minute or two, flip and cook on the other side.
