Rainbow Hummus Pinwheels 

So as much as I look forward to summer and enjoy being home with my kids,I secretly get excited about back to school. Yes, I’m happy that they kids get back into their routine again and things will be more organized around the house…but I’m also excited about a new class, new students and a whole new year of fun memories ahead. 

What I sometimes don’t look forward to is making lunches. It’s just so hard to come up with ideas for food that not only they will eat…but are quick and simple to make and most of all are healthy too. 

So here’s an idea for a make ahead wrap that is both kid and mom approved. Rainbow pinwheels give its beautiful colour to the variety of veggies used in this wrap which rolled and cut sushi style. 

First I started off with a whole wheat tortilla but you can use bread that’s rolled out or a pita if you wish. You need to use something to bind the filling to the bread and hold it all together. Hummus is my go to in this case because it’s so much healthier than mayo or anything else that you can put. Spread it abundantly on the torrilla and then layer turkey breast and veggies on your wrap as well. I used shredded cabbage, peppers, carrots and avocado on mine and placed them in the centre of my pita. 


Roll the tortilla tightly and wrap it in Saran Wrap. Leave it in the fridge overnight or at least 1/2 hour before you slice it. Slice into 1 inch thick pieces and place in Tupperware containers for kids to devour at school.
