Farfalle with Tuna, Tomatoes, Olives and Onions

This is another one of my super simple recipes.  I like to keep key staples in my pantry and fridge (but that’s for another blog post) and this is one of those recipes that take no time and can be done when you have no food in the house.

Funny enough, I did grocery shop on the morning I made this, and was so tired I brought the kids for burgers for lunch after. So sometimes, even when you have food in the house, you crave something thats so simple cause you’re just exhausted from watching kids all day, entertaining, cleaning up and running errands.

For 4-6 People (20 min, $$)

  • 1 450g pack farfalle pasta (I also make this recipe with linguine)
  • 1 can tuna
  • 1 jar black olives (about 1 cup)
  • 1 cup grape tomatoes, halved
  • 1/3 cup olive oil
  • 1 large onion, chopped or sliced finely
  • 6 sun dried tomatoes, sliced finely (optional)

Procedure

  1. Put all the ingredients (except pasta) in a deep sauté pan.  Turn stove on medium heat and cook all ingredients, crumbling tuna with spoon or fork.  Cook for about 8-10 min or until onions are translucent in colour.  Add more olive oil if needed.
  2. In the meantime, bring a large pot of water to a boil.  Add a small handful of salt to the water. Make sure the pot is large enough that the pasta is covered complete with water.  Add pasta and boil pasta according to package instructions.
  3. Reserve 1 cup of the pasta water. Drain pasta when it’s still al dente (hard) and add to the sauté pan.Mix well.  Add half of the pasta water and turn off heat. Continue to mix until well coated with the sauce.  Add more olive oil if necessary.

See , that’s a bit too easy but it’s definitely a hit with the kids and if you’re having guests.
