Orecchiette with Broccoli 

As you know, I’m all in for fast easy meals. This recipe is one of my go to one’s for nights I am in a pinch for time. 

When you read this, you’ll probably be thinking “what is she doing?”  I’m totally aware that this is not the real way to make this type of pasta but I’ve made it this ‘shortcut’ way many times and my Italian husband never noticed a difference. I noticed a huge difference… it takes less time to make and only one pan was dirty  lol. 

Cook time: 15 min plus prep time. Difficulty: Easy. 

What you’ll need (for a family of 4-6)

  • 450g cavatelli or orecchiette pasta. This type is the best as the broccoli will stick better to the pasta
  • 3 cups clean and chopped broccoli
  • 1 clove garlic, whole
  • Olive oil 6 tbsp
  • 1/2 cup grated mozzarella
  • Parmesan cheese, as desired 

Directions: 

  1. Bring a large pot of water to a boil. 
  2. Add broccoli and garlic clove to the pot and boil for 3-4 min 
  3. When water starts to boil again, add pasta. Cook according to package time.
  4. Drain pasta and water. Put back in pot. Add olive oil and cheeses. Warm just a little until all is melted and combined. Enjoy.
