Prosciutto Wrapped Turkey Ricotta Meatballs with Tzatziki Sauce

Makes about 30 small meatballs.

Ingredients

  • 1 small tub (250g) soft ricotta cheese 
  • 250g lean ground turkey
  • 1 egg
  • 1/2 cup seasoned breadcrumbs
  • 8-10  slices of prosciutto cut in half lengthwise and then cut each strip in half
  • 1 tub Summer Fresh Tzatziki

Procedure

  1. Combine first four ingredients with a fork or by hand.  Form small meatballs with a tablespoon full of mixture. It should fit in the palm of your hand.  Shape into elongated rolls and wrap each one with prosciutto.
  2. Place on a parchment paper lined baking tray. Bake at 380F for 20 min.
  3. Let cool before serving with tzatziki.
