Oven Roasted Sea Bream With Potatoes and Grape Tomatoes

 

Again, this is an easy and quick recipe, making it a no-brainer to impress friends and family at your next gathering.

Ingredients:

  • 1 whole Sea Bream (Orata), gutted and descaled
  • 1 small pint grape tomatoes, cut in half
  • 2 medium sized potatoes
  • salt, pepper to taste
  • olive oil qb
  • 2 tbsp chopped parsley
  • 1 clove garlic finely chopped (I used a garlic seasoning
  • 1 cup white wine
  • 1/2 black olives (optional)

Instructions:

  1. Preheat oven to 350F. Peel and chop potatoes in 1/2 inch cubes.  Add to boiling water and drain after 5 minutes so that they can begin to cook.  Drain when outside begins to get soft but fork still does not go through.
  2. In the meantime, drizzle olive oil on the bottom of an oven-proof Pyrex dish.  Add sea bream and spices, garlic, salt and pepper. Turn and repeat on other side.  Add some of the seasoning inside the fish as well with your hands.
  3. Add potatoes and grape tomatoes (and olives if desired).  Toss in olive oil seasoning as well.  Put in oven for 10 minutes or until potatoes start to brown.  Remove from oven,  turn, add white wine and 1/2 glass of water. Continue to cook for about 10 minutes longer, until fish is cooked.
