Oven Roasted Octopus and Potatoes

This one was a hit with all the guests and so easy to do because you can make it ahead and finish it off just before serving. 

For 6-8 people

  • 1 medium sized octopus
  • Olive oil 6 tbsp
  • 4 medium sized potatoes
  • 2 tbsp parsley
  • 1 tsp salt or more if needed
  • Ground petter
  • 1 clove garlic

  1. Bring large enough pot of water to a boil. Put in octopus whole and let boil for 30 min. 
  2. Drain and let cool. Cut tentacles into small pieces about 1 1/2 cm thick. Place in cast iron pan. 
  3. Peel and chop potatoes. Drop in boiling water for 10 min or just until outside begins to get soft. Drain. 
  • Place in pan with octopus. Add olive oil, salt, parsley, minced garlic and ground pepper. Mix everything together. I put it in our wood burning oven but you can broil it at 450 in the oven until the potatoes get golden and crispy on the outside. Stir as necessary. Let cool a bit before serving. Enjoy.
