Pasta with Meaty Tomato Sauce


Ok so here’s an easy tomato sauce recipe that’s so tasty, everyone licked their plates clean ?. The trick to making a sweet tasting tomato sauce is time! It needs to cook on low/simmer for a few hours for that beautiful taste. 

For 6 people (I had leftovers but used it to make a nice eggplant Parmesan the next day. You can even put it in rice with mozzarella.)

  • 1-2 l tomato sauce/puree. I use home made but if you get ‘passata di pomodoro’ which means tomato puree from the grocery store it will be good. Invest in more expensive ones for a better tasting sauce. 
  • 300g ground meat (beef, veal, pork or all 3 if you want)
  • 1 clove garlic
  • 1 tbsp chopped parsley
  • 1/4 cup (about 1 count) chopped onion
  • 5 tbsp olive oil
  • 1/4 cup white wine
  • Salt and pepper to taste
  • 1 pkg (450 g) penne pasta
  1. Put oil, onion, garlic and parsley in a deep pot. Allow to cook a few minutes on medium-high heat until onion softens.  Watch the garlic so it doesn’t burn. 
  2. Add ground meat and 1/4 cup white wine and cook until meat is no longer pink. Try not to overcook meat. 
  3. Add tomato sauce and stir. Add 1/4 cup water if you want. Bring to a boil and then  deop the temperature to simmer and cover the pot with a lid.
  4. Cook on low for at least 1 hour. Add salt and pepper to taste. 
  5. Cook pasta to package instructions. Drain and put back in pot. Cover with sauce and stir. Let sit for a few minutes before serving so that the sauce can stick on to the pasta.
