Calamari Bruschetta

Bruschetta is a wonderful appetizer that is enjoyed by almost everyone.  I made this up one day while trying to think of what to bring as an appetizer to a friend’s house.  It’s super easy to make and transport, just add the toasted crostini before serving as they may get soggy after.

For 4-6 people, difficulty: easy, time: 35 minutes (including prep)

Shrimp and Zucchini Quinoa Salad

This was a great light recipe that surprisingly even my boys loved. You can make it ahead and eat it cold or at room temp. Quinoa is light, gluten free, low GI and high in protein compared to other grains (although it is actually a seed). The dressing is versatile and can be used for any kind of salad.
